One pot of Killowen Lemon Curd Greek Yogurt makes 3 big insanely zesty lemon pancakes, make sure to have a few pots ready as these are guaranteed to be a big citrusy hit with the whole family
INGREDIENTS:
- 1 pot (140g) Killowen Lemon Curd Greek Yogurt
- 140g self-raising flour
- 1 egg
- Butter, for frying
METHOD:
- Scoop the Killowen Lemon Curd Yogurt into a jug and whisk to combine the lemon curd and yogurt. Add the egg and whisk again until smooth.
- Rinse and dry the yogurt pot, then use it to measure 140g self-raising flour. Add the flour to the yogurt mixture and whisk until you have a smooth batter.
- Heat a knob of butter in a frying pan over medium heat. Spoon one-third of the batter into the pan, cooking until bubbles appear on the surface (about 2-3 minutes).
- Flip the pancake and cook for another minute, then transfer to a plate. Repeat with the remaining batter.
