One pot of Killowen Lemon Curd Greek Yogurt makes 3 big insanely zesty lemon pancakes, make sure to have a few pots ready as these are guaranteed to be a big citrusy hit with the whole family

INGREDIENTS:

  • 1 pot (140g) Killowen Lemon Curd Greek Yogurt
  • 140g self-raising flour
  • 1 egg
  • Butter, for frying

METHOD:

  1. Scoop the Killowen Lemon Curd Yogurt into a jug and whisk to combine the lemon curd and yogurt. Add the egg and whisk again until smooth.
  2. Rinse and dry the yogurt pot, then use it to measure 140g self-raising flour. Add the flour to the yogurt mixture and whisk until you have a smooth batter.
  3. Heat a knob of butter in a frying pan over medium heat. Spoon one-third of the batter into the pan, cooking until bubbles appear on the surface (about 2-3 minutes).
  4. Flip the pancake and cook for another minute, then transfer to a plate. Repeat with the remaining batter.
