This is a fabulously fast, healthy and tasty lunch and is especially good when you have some left over chicken to hand!
100g of cooked chicken, chopped
4 tbsp of Killowen Farm Natural yogurt
4 tbsp of toasted flaked almonds
2 tsp curry powder
1tsp of turmeric
2 grated carrots
2 handfuls of baby spinach
- Mix the cooked chicken, yogurt, almonds & spices.
- Lightly toast the sourdough bread and top with the spicy chicken mix. Serve with baby spinach and grated carrot drizzled in olive oil.
